Cypriots preferred this area, Kathikas, for making wine because of the favourable climate and the natural habitat, the underground wine cellars which were carved into the stone. Relics of these ancient cellars still exist today. The discovery of these ruins inspired "Sterna Winery". At Sterna they try to keep as much as possible to the traditional wine making methods.
